Indirect heating with low pressure steam (0.5 bar), generated inside the cavity via resistors equipped with a safety thermostat. Hot and cold water refill taps located on the work surface with an articulated spout for filling and washing the container and the cavity. One and a half inch chromed brass drain tap with athermal handle. Mechanical pressure gauge with cavity pressure indicator. Power delivery regulated by a 3-position switch. STANDARD EQUIPMENT
Available in the direct heating version (gas models only) for cooking liquid foods that do not require stirring and in the indirect heating version (gas and electric) for denser dishes, such as creams and sauces. The AISI 316 steel tank, highly resistant to corrosion from salt and sauces, can also be used by inserting large baskets which allow the cooking of large quantities of vegetables. Cleaning and maintenance operations are facilitated by the rounded edges and the easily removable drain tap: any small spills drain into the hole in the top.
